It is harvested from old trees that are 40 to 45 years old by carefully picking them. Only 180 items are in stock in Japan.
In 2018, the color is darker and the strength is impressive. You can feel the hard tannins that are unique to Fixin, but with a moderate barrel feel, the finish is enjoyable even when you are young.
From cultivation to brewing, the owner, Aurelian, is in charge of everything, and it has been carefully cultivated until it is released.
The color of the ruby gives off a slightly deeper and darker color.
The scent of humus, which is typical of Burgundy, is clearly visible, and over time, the aromas of red cherries, violets, and cinnamon rise intricately intertwined.
