The Château Pavi Macan is a chateau that was brilliantly promoted to Premier Grand Cru Classe (1st Special Grade B) by the rating review of Saint-Emilion in 2006.
The location is located on the highest hill in Saint-Emilion, next to the Chateau Trolon Mondo and the 1st Special Class A Chateau Pavi vineyards, which is the best location called “Cote Pavi”.
For about 10 years in the 70’s, the wine’s reputation had declined without taking advantage of its wonderful terroir.
The reason why such Pavi Macan wines attracted attention again was after adopting the biodinami farming method (organic cultivation) and making wines that face nature.
Bordeaux’s famous duo, Nicola Tianpon, and his assistant, Stephen Dornon Cour, helped improve the vineyards.
They started managing in 1994 and realized that the qualities of the fields they originally had were not being utilized. And we made an effort to make the best use of the best terroir that exists in “Saint-Emilion Hill”.
The aim was not to make a new modern wine, but to regenerate the “essence” that had been sleeping for many years. This project, entitled Research, has achieved a fusion of the natural environment plus the brewing technology cultivated over the years.
