100% Muscat Berry A cultivated in “Shimono Ryohata” in Minami Alps City, Yamanashi Prefecture. Fermented with selected yeast used only for “Laputa”, and trampled with human feet without using a machine to crush the grapes. Made with no sugar, no filtration and no clarification, this wine is the culmination of Domaine Hide’s passion and effort.
Using a special manufacturing method that brewer Shibuya calls “forbidden brewing Senier”, wine is produced from the peel and the flesh around the seeds where the flavor gathers. This “Laputa” is made from only the peel and pulp of the grapes by extracting 43% of the liquid from the crushed grapes and eliminating the juice.
Aged in old barrels for a long time, it has a deep finish and delicate tannins.
The ultimate berry A that can be expressed as Japanese Pinot Noir. The 2017 vintage was very sunny and the grapes grew well, making it the “pretty and lingering wine” that Domaine Hide aims for.
