Arrange the harvested ripe P.X. (Pedro Ximenez) and dry in the sun for 10 days. Squeezed in a dried grape state where the water content has evaporated and the sugar content has increased, and fermented in a stainless steel tank for 5 months. Good year, single year, aged for at least 25 years in the same barrel, not in the Solera system, with the addition of distilled spirits of P.X. wine to stop fermentation. Limited production.
