“Koshu nigari” is a fresh and fruity new sake made in the traditional Japanese varieties “Koshu”, which is tasted in the autumn when grapes are harvested. After fermenting carefully at a low temperature, bottling the stubborn supernatant in the tank. A very delicate “raw wine” that is neither filtered nor heat sterilized.
In order to maintain high turbidity, it is often modified, but the château liqueur wine is bottled as it is without sterilizing the slightly cloudy supernatant liquid from the fermented tank without thermal sterilization. As the wine is in its natural state, the ingredients of the foam gradually deposit and are transparent. Gently shake the lees to enjoy the rich flavor.
